Tomato Coeur be Boeuf
Not to be confused with the more common Beef tomato the Coeur de Boeuf, sometimes called the Ox heart is a species of tomato only grown in Europe.
With its unique shape the Coeur de boeuf stands out on the plate, the Coeur de boeuf also ripens from the inside out, meaning it can be eaten with the outer skin still being green, this leads to a unique colour when eating the tomato early. The Coeur de boeuf also has less moisture in it which lends itself to a fleshier fruit than other species.
The Coeur de boeuf is an amazing salad tomato and is excellent when paired with mozzarella for Mediterranean inspired dishes.
