Salsify
Sometimes referred to as the oyster plant, salsify is one of the more uncommon root vegetables.
When cooked it develops a flavour reminiscent of oysters (hence oyster plant) The root itself can be treated in a similar way to any other taproot such as parsnips.
Whether adding a unique flavour to soups or stews or being mashed and used alongside a roast salsify is definitely an unusual ingredient that is worth having a look at.
