Crisp peppery radishes are available all year round and are a great companion to seafood and game dishes. The root of a plant classified as part of the mustard family they grow throughout the year in a number of varieties. In salads their fresh taste acts as an excellent accompaniment to strong flavoured meat such as duck and is versatile enough to be pickled and used as a garnish to chargrilled squid. Radishes also work well as a seasoning in soups or stews; however they are best served raw in order to retain their full flavour and crisp texture.
