Potato Rooster

Rooster potatoes are instantly recognisable due to their red skins.

They have a wonderful earthy flavour which makes them fantastic for creating potato skins. Simply wash them, cut in half, drizzle with olive oil and bake skin side down in the oven.

Once the potato is tender remove from the oven, scoop out the flesh and mix it with crispy bacon or any other topping of your choice, put the mix back into the potato skin and return it to the oven with a lovely cheese topping. Once the cheese is melted and bubbling you have a truly scrumptious meal.
