Estima Potatoes are small with firm flesh. This makes them superb for boiling for use in salads or as a simple side dish.
Another slightly more extravagant way to serve them is to first wash and peel then put in a pan of boiling water, once they are tender drain them and add them to a frying pan with olive oil, garlic, salt and pepper. Gently break the potatoes so they crack and then roll them around the pan so they get coated in the oil and garlic.
As they start to crispen up remove from the pan and serve alongside something light such as salmon.
