Marrows

The marrow is believed to have first been cultivated in the Americas between eight and ten thousand years ago and has been an enduring and popular fruit since. The marrow makes a wonderful substitute for the courgette in many recipes. One common and great way to use the slightly firmer flesh of the marrow is to stuff one with spices and meat mixed with the scooped out marrow flesh before roasting in the oven.
