Lettuce Endive French

The French Endive is grown all year round; its pale creamy white leaves are created by harvesting the plant, removing the green outer leaves then replanting the endive in darkness. This leads to the growth of the lighter outer leaves and helps develop the French Endives light bitter taste. Usually coupled with sweeter ingredients and salad dressings in order to contrast with the bitterness of the leaves French Endive has a firm crisp texture and cup like leaves which makes them ideal for shredding for use in salads.
