Lemongrass is popular in Indian and Asian cooking with it being particularly prevalent in Thai cuisine. The aromatic stems impart a sweet and subtle citrus flavour. Used in marinades or as an ingredient in fish or seafood dishes lemongrass can be used finely sliced, or in a similar manner to cinnamon. Simply bash the stem to release its aroma and then allow it to cook with a dish and infuse. Lemongrass also partners well with the flavour of ginger.
