Lemon Grass

Lemongrass is popular in Indian and Asian cooking with it being particularly prevalent in Thai cuisine. The aromatic stems impart a sweet and subtle citrus flavour. Used in marinades or as an ingredient in fish or seafood dishes lemongrass can be used finely sliced, or in a similar manner to cinnamon. Simply bash the stem to release its aroma and then allow it to cook with a dish and infuse. Lemongrass also partners well with the flavour of ginger. The sweetness of the lemongrass offsetting the heat and spice of the ginger perfectly. This combination is popular in herbal teas and marinades for its interesting mix of sweet and savoury.
