Baby leeks closely resemble spring onions and have delicate shoots which produce a subtle and sweet flavour. Mild enough to be eaten raw the leaves of the baby leek are hardy enough to stand up to long periods of cooking. This makes baby leeks well suited for use in pie fillings or stews. Baby leeks are delicious roasted, which will intensify the flavour and create a lovely sweet baked flavour which accompanies meats such as pork excellently.
