Chillies Birds Eye
The Birds Eye chilli, also known as the Thai chilli is a common staple in Thai and other south east Asian cooking.
The strong smelling chillies can be found in a variety of colours from the common red and green to more unusual colours like purple.
The Birds Eye chilli is roughly the same level of heat as a Habanero, and until the discovery of other species of chilli was regarded as one of the hottest in the world. The Birds Eye chilli is a wonderful accompaniment to fresh fish and is superbly complimented by the citrus zing of lime juice. In fact lime juice, fish sauce and Birds Eye chillies are often combined to make a sauce called “Phrik Nam Pla” which accompanies many Thai dishes.
