Chicory White

White chicory has pale creamy white leaves with pale green tips. The outer leaves have a mild bitter flavour whilst the inner leaves have a more delicate taste.

The leaves when combined with Red Chicory create a wonderful visual contrast between red and green as a salad. However White Chicory is robust enough to be cooked which softens the bitter taste and is an excellent accompaniment to game or other strong flavours such as strong cheeses.
