Recognisable for its crinkled textured leaves the Savoy cabbage is deceptively tender and sweet tasting. Savoy cabbage is at its best when cooked which allows its flavour to develop and mature. The savoy is, like other varieties of cabbage, an excellent accompaniment to roasted meats. Wilted and served with lardons and toasted walnuts transforms and enhanced the taste of the Savoy and allows it to stand on its own or as a side dish.
