Originating in the south of Italy Cavolo Nero has a slightly bitter and tangy flavour with a sweeter after taste. The complex flavour of the Cavolo Nero makes it incredibly versatile, coupled with a season that spans summer into winter it can find its way in many dishes from a crisp salad to a delicious roast. One great use for Cavolo Nero is to shred it, then gently wilt it before mixing it through Tagliatelle and topping with a strong cheese like Pecorino for a tasty and hearty pasta dish.
