Blackcurrant

These small and strongly flavoured berries are not just for jams and juice. Blackcurrants have been a key part of the British diet since they were used as a supplement for vitamin C in World War 2.

A common accompaniment to apple (due to sweetness of the apple offsetting the tartness of of the blackcurrant) blackcurrants are a key ingredient in a summer pudding.

Stew apple, blackberry, blackcurrants, and redcurrants until they are soft then add this to a bowl which has been lined with white bread, seal the bowl  with more bread and then place some weight on top of the bowl. After a few house the juice should have turned the bread a wonderful purple colour and transformed the ingredients into a fantastic summer pudding which is fantastic served with cream.
