Peashoots
Quintessentially British these young and tender leaves are harvested after 2 to 4 weeks and can be used all year round as an alternative to traditional salad leaves. Simple to prepare and readily available these nutritious leaves are found in everything from salads, risottos and Chinese food to more unusual places like cocktails, one such cocktail known as “The Peashooter” mixes pea shoot puree with Absinthe and Cointreau. With their high levels of antioxidants, vitamins A, C and Folic Acid pea shoots also serve as a fresh alternative to garden peas, retaining a similar flavour but a reduction in calories.
