Lettuce Flat
With many varieties and availability lasting throughout the year the large grassy green leaves of flat lettuce have a mild flavour which is complimentary to many ingredients.
The broad smooth leaves are obviously great in salads and provide body to a dish but flat lettuce is versatile enough to be used in everything from a garnish to a chilled soup. The thick tender leaves also stand up to cooking superbly so being added last minute to stir-fries and placed on top of a burger on a barbecue as it finishes cooking make use of its delicate flavour which matures when cooked.
