White Asparagus is unique in the way it is grown. Soil is piled over the tops of the spears to deny them direct access to sunlight causing the spears to be a brilliant white colour as opposed to the more common green. White Asparagus is tender with a mild flavour and a soft delicate texture. The spears can be used in the same ways as green asparagus however it is sweet enough to be used raw in salads as well as the usual cooked methods such as sautéed and served alongside seafood such as Scallops.
