Squash Butternut
This sweet and nutty relative of the pumpkin is absolutely delicious. It might take a lot of preparation but the result is well worth it. Cut the squash in half and scoop out the seeds, from there roast in a hot oven until tender then scoop out the flesh and mash it with chilies, bacon and walnuts for a really hearty and flavoursome dish.
